Cheese Cake

Ingredients: 
 3 pie crust with graham crackers 
 1 8 oz cream cheese 
 1 8 oz sour cram 
 1 sm pgk vanilla instant pudding 
 1 can cherry pie filling 
 6 pkgs. dream whip envelopes 
 3 ½ cups milk 
Preparations: 

In a mixing bowl, pour 3 cups of milk, 6 packages envelopes of dream whip.  Mix till fluffy.  While beating, add cream cheese, sour cream, vanilla instant pudding, add 1/2 cup of milk, continue beating, add a few drops of vanilla extract. Once fluffy, pour into 3 pie crust and add cherry pie filling. 
Freeze overnight and serve.  Make 3 pies.


 
Mud Pie Cake

Ingredients:

 1 pgk pecans chopped 
 2 sticks butter 
 2 cups powdered sugar 
 2 8 oz cream cheese 
 2 cups four 
 1 16 oz tub cool whip 
 4 cups milk 
 2 pkgs. Jell-O instant chocolate pudding

Preparations: 

Melt butter, mix with pecan and flour to make crust and spread evenly into a baking dish (12x16) and bake at 400 degrees for 15 minutes.  Let cool. 
In a large bowl, mix 2 pkgs. of chocolate instant pudding with 4 cups of milk, using wire whisk.  Refrigerator for 20 minutes till firm. 
In a large bowl, mix  2 8 oz cream cheese, 2 cups powered sugar, 2 cups cool whip smoothly.  Spread evenly over baked crust using a rubber spatula. Spread chilled chocolate pudding evenly for next layer.  Spread remaining cool whip over chocolate layer.


 
Sponge Cake - Pound Cake

Ingredients: 

  1 dz. eggs 
  1 c sugar 
  1 c flour 
  ¼ tsp. baking powder 
  ¼ tsp. baking soda 
  1 tsp. vanilla extract

Preparations: 

Separate egg whites and yolks.  In a large bowl, using a mixer, beat 1 dozen egg whites for 5 minutes, add yolks and beat for another 5 minutes. 
Add remaining ingredients till smooth and fluffy.  Pour mixture into a 9x13 pan and bake at 350 degrees for 30 minutes. 
Serve with butter or jelly. 

Note:  Use Sponge Cake - Pound Cake to make Latiza. 


 
Latiza - Pound Cake Pudding

Ingredients: 

    1 sponge cake or pound cake 
    1 2/3 C evaporated milk 
    ½ C cornstarch 
    7 Tbs. sugar (add more to your taste) 
    2 tsp. vanilla extract 
    ¼ C butter or margarine 
    2 eggs well beaten 
    ground cinnamon 
Preparations: 

Slice cake and layer on large platter.  Place1 1/3 cups water in a sauce pan.  Add milk and sugar before water reaches a complete boil; stir well  While stirring, dissolve corn starch in 1/3 cup water.  Add vanilla extract into the boiling sauce pan and gradually add milk over low head until mixture thickens and is cooked.Remove from heat and add butter.  Add beaten eggs ¼ portion at a time, stirring vigorously. Pour over sponge cake.  Sprinkle with cinnamon. 
Makes 8 servings


 
Fried Pumpkin Turnover
(Buchibuchi) Filling

Ingredients: 

  • 1 small pumpkin
  • 1 cup sugar 
  • ½ tsp. cinnamon 


Preparations: 

Peel pumpkin.  Cut pumpkin into medium sized cubes and boil in water until tender. Drain. Place pumpkin in a  large bowl and mash. Add sugar and cinnamon.

Turnover Pastry

Ingredients: 

  • 4 cups flour 
  • 1 tbs.. sugar
  • 3/4 coconut milk 
  • 1 tsp. shortening 
  • ½ tsp. baking powder (optional) 

Preparations: 

Mix flour and coconut  milk until easy to handle. Roll dough thinly and cut into inch rounds. Fill one tablespoon onto dough, fold over and press ends. Pinch ends with fork. In a  deep skillet, fry turnovers in hot oil until golden brown.


 
Red Velvet Cake

Ingredients:

  • 1 box Duncan Hines Yellow or Butter Cake Mix
  • 4 eggs
  • 2 Tbsp mayo
  • 2 Tbsp cocoa
  • 1 Tbsp baking soda
  • 2 Tbsp vinegar
  • 1 1-oz bottle red food coloring
  • 1 8-oz cream cheese
  • 1 ½ C powdered sugar
  • 1 stick butter
  • red sugar crystal cake decor
Preparations:

Follow Directions on Yellow Cake Mix. While beating cake mix andd the next six ingredients. Pour into a 9x13 baking pan at 325 degrees for 45 minutes or till done by using toothpick - inserting into cake, if toothpick comes out clean or not wet. 
Let cool. 

Icing: 
In a large bowl, mix cream cheese and powdered sugar together. Spread icing over cooled cake and sprinkle red crystal decor.


 
Coconut Rice Pudding

Ingredients:

  • 2 cups coconut milk 
  • 3/4 cup rice (uncooked) 
  • 1/2 cup sugar 
  • 1/2-3/4 cup raisins.  Substitute 

  • candied pineapple cubesif desired. 
Preparations:

Mix ingredients. Place in baking dish and bake for 30 to 45 
minutes in a moderate oven. Serve with whipped cream if desired. Sprinkle grated coconut on top. One egg may be beaten and added to the ingredients before baking.
